Irish Soda Bread 🍀

Irish soda bread has to be the easiest bread to make. No rise time needed, just put it all together and bake. The only challege with making this bread is that it is sticky when kneading it! So either wet your hands with water or a tad bit of oil. But prepare yourself for an amazing bread - perfect when warm with some vegan butter - or plain to dip inot a good hearty Irish stew.

Here is what you need:

  • 2 cups of soy milk (my go-to is always Edensoy, it is unsweetened soy milk and you can find this in a carton on the shelf and not in the cold section)

  • 2 tsp of apple cider vinegar

  • 4 cups of all purpose flour (best choice is King Arthur!) [note: keep about 1/2 cup on the side for kneading!]

  • 3 tbsp of granulated sugar (I use organic cane sugar)

  • 1 tsp baking soda

  • 1 1/2 tsp salt

  • 4 tbsp vegan butter, cold and cut into pieces

These chocolate chip cookies sound like the kind you end up making again and again once you get the texture just right. Simple ingredients, but the real difference usually comes down to small details like butter temperature and how long you chill the dough. That’s what makes a good cookie turn into a great one.
