About the Recipe

This dish comes together quickly as long as you prep all your ingredients first. This is such a delicious meal that you can enjoy through the fall and winter months. It is also a great meal for lunch the next day. So let's get to it!

Ingredients

Mashed Potatoes

  • 3 pounds of Yukon Gold potatoes, peeled and quartered

  • 2 tsp salt (divided)

  • Fresh cracked pepper

  • 1-1.5 cups of fortified soy milk

  • 6 tbsp butter

 

Meat filling

  • 2 tbsp extra virgin olive oil

  • 1 large onion, diced

  • 4 garlic cloves, minced

  • 2 large carrots, peeled and diced

  • 2 celery stalks, diced

  • 1 package of Impossible Ground (or Beyond ground)

  • 1 tsp salt

  • Fresh cracked pepper

  • 1 cup of vegetable stock (or Better Than Bullion, vegan beef mixed with 1 cup of hot water)

  • 2 tbsp tomato paste

  • 2 tbsp vegan Worcestershire sauce

  • 1 tsp thyme

  • 1 cup of frozen peas

Preparation


  1. Heat the oven to 400*

 

Cook your potatoes:

  1. To a pot, add the potatoes and cover with cold water. Drain. Repeat two times. This helps remove some of the starch.

  2. Cover the potatoes with just enough cold water, 1 tsp of salt, cover, and bring to a boil.

  3. Allow to boil until the potatoes are tender and can be pierced with a fork.

  4. When ready, drain and mash the potatoes.

  5. Add the butter and mash the potatoes again.

  6. Now add the remaining 1 tsp of salt, pepper, and milk. Start with 1 cup of milk and add more as needed.

  7. Mash and stir until creamy.

  8. Set aside.


Make your filling and bake:

  1. Heat a large cast-iron pan on medium-high heat.

  2. When ready, add your oil and let it warm.

  3. Add the onion and garlic with a big pinch of salt and sauté for 5 minutes.

  4. Add the carrot, celery, and vegan beef. Cook until the beef is no longer pink.

  5. Next, add the broth, tomato paste, Worcestershire, thyme, salt, and pepper, and simmer for 5-10 minutes.

  6. Add the peas and mix until combined with the meat mixture.

  7. Remove from the heat and top with the mashed potatoes.

  8. Put in the oven for about 25-30 minutes.

  9. Turn on the broiler and brown the tops of the potatoes for about 3 minutes (keep an eye on them, as they can brown quickly!).
