Ingredients
Mashed Potatoes
3 pounds of Yukon Gold potatoes, peeled and quartered
2 tsp salt (divided)
Fresh cracked pepper
1-1.5 cups of fortified soy milk
6 tbsp butter
Meat filling
2 tbsp extra virgin olive oil
1 large onion, diced
4 garlic cloves, minced
2 large carrots, peeled and diced
2 celery stalks, diced
1 package of Impossible Ground (or Beyond ground)
1 tsp salt
Fresh cracked pepper
1 cup of vegetable stock (or Better Than Bullion, vegan beef mixed with 1 cup of hot water)
2 tbsp tomato paste
2 tbsp vegan Worcestershire sauce
1 tsp thyme
1 cup of frozen peas
Preparation
Heat the oven to 400*
Cook your potatoes:
To a pot, add the potatoes and cover with cold water. Drain. Repeat two times. This helps remove some of the starch.
Cover the potatoes with just enough cold water, 1 tsp of salt, cover, and bring to a boil.
Allow to boil until the potatoes are tender and can be pierced with a fork.
When ready, drain and mash the potatoes.
Add the butter and mash the potatoes again.
Now add the remaining 1 tsp of salt, pepper, and milk. Start with 1 cup of milk and add more as needed.
Mash and stir until creamy.
Set aside.
Make your filling and bake:
Heat a large cast-iron pan on medium-high heat.
When ready, add your oil and let it warm.
Add the onion and garlic with a big pinch of salt and sauté for 5 minutes.
Add the carrot, celery, and vegan beef. Cook until the beef is no longer pink.
Next, add the broth, tomato paste, Worcestershire, thyme, salt, and pepper, and simmer for 5-10 minutes.
Add the peas and mix until combined with the meat mixture.
Remove from the heat and top with the mashed potatoes.
Put in the oven for about 25-30 minutes.
Turn on the broiler and brown the tops of the potatoes for about 3 minutes (keep an eye on them, as they can brown quickly!).
Piping hot Cottage Pie just out of the oven with fresh Irish Soda Bread!
