Pomodoro Sauce

When I visited Italy there was something I just could not forget - the SAUCE. The pomodoro sauce in Italy is at an etirely other level. I am not sure if it's becuase of the tomoatoes and how they are grown with such care, or if it is the dedication they give to making an amazing sauce each and every time.


So when I came back, I was on a mission to recreate the taste I could vividly remember - this may not be the "traditional Italian" recipie - but it is what takes me back there - every - single - time.

Here is what you will need:

  • 1 carrot, washed and cut into 2 (this is because it is easier to remove before blending!)

  • 1 red onion, quartered

  • 6 cloves of garlic, smashed

  • Vegan butter

  • EVOO (this video shows Graza, but I prefer EVOO from Bona Furtuna)

  • Salt

  • Pepper

  • 1 28oz can of San Marzano whole peeled tomatoes (note: add the tomatoes and all the juice to a bowl and with your hands, grab each tomato and carefully squeeze to break them up - I say carefully because the tomato juice and seeds will go everywhere!)

  • Fresh basil

  • Vegan parmesan (if you want to add it)
